I REMEMBER the first time I heard 'How to Make Gravy'. It was 1997, and I was about halfway through a two-year stint living in America, when I was sent a copy of Paul Kelly's greatest hits to review. The album featured an obscure track called 'How to Make Gravy', which Kelly had released on an EP in 1996.
